Prof. Nurit Argov-Argaman is an expert in animal nutrition and lipid metabolism, with her academic journey rooted in The Hebrew University of Jerusalem. After earning her PhD, she completed a post-doctoral fellowship at the University of California, Davis, before returning to Israel to establish a research group in lactation physiology and metabolism.
Her research primarily focuses on the physiological and metabolic regulation of lactation, with a specific emphasis on the composition and structure of milk lipids. Prof. Argov-Argaman’s work explores how maternal physiology influences milk quality, composition, and structure and its implications for the consumer. Her innovative studies provide critical insights into strategies for enhancing milk's nutritional and technological value. In addition, her studies shed light on the metabolic, genetic and biochemical regulation of milk components, especially lipids.
In addition to her academic achievements, Prof. Argov-Argaman co-founded two innovative startups leveraging cell culture and fermentation technologies to produce milk-mimetic components, paving the way for improved nutritional and functional properties in dairy alternatives.
